Sriracha Orange Ginger Cod // 2014 Goals by Lauren Conrad

You probably read that title and were overwhelmed by two completely different post topics. Let’s keep things interesting around here. In the new year, I vowed to eat more whole foods and really focus on vegetables, fruit, and lean proteins. As much as I love fish, I often forget how easy it is to make at home. Like so easy guys. All fish really needs is a good marinade or some fresh herbs. Then you just pop it in the oven and bake!

I had some Atlantic cod left over from my Sizzlefish box that I needed to use, and since cod is a very mild fish, I created a very flavorful marinade. I hope you’re not sick of sriracha. And if you are, just substitute it out with the hot sauce of your choice but DON’T TELL ME ABOUT IT. 😉

Sriracha Orange-Ginger Cod

Ingredients:

  • 1/4 cup fresh orange juice
  • 2 tbsp. soy sauce
  • 1 tbsp. sriracha
  • 1 tbsp. freshly grated ginger
  • 1/2 tbsp. honey
  • 3 cloves of garlic, minced
  • 4 portions of codfish (3.5-4 oz. each)
  1. Preheat oven to 400* and line a baking dish with enough foil to create a packet for the fish.
  2. In a small bowl, whisk together orange juice, soy sauce, sriracha, ginger, honey, and garlic. Set aside.
  3. Pat fish dry with a paper towel then place in baking dish. Pour sauce on top, then pinch together the sides of foil so the fish is completely enclosed.
  4. Bake for 15-20 minutes or until fish lightly flakes with fork. Serve immediately.

As you can see, I ate my fish with some sautéed kale and quinoa. There was extra sauce from the fish, so I drizzled that on top of everything. It was delicious. If you love that sweet and spicy combo, try this out. I think it would be great with any mild fish or salmon.

Now, for some goals.  Yesterday I mentioned loving LC’s resolution list. It didn’t occur to me until I read my friend Lauren’s post that I should actually share my ideas with you. Here we go!

A bad habit I’m going to break: Picking off my nail polish. I can’t imagine how bad this is for my nails, let alone a complete waste of polish. But once I have a chip, I can’t stop! Argh.

A destination I’d like to visit: Austin.

I’m going to work harder at: Being more consistent with how often I work out and mixing up my routines.

A project I’d like to finish: I need to organize my shoes. The floor of my closet is frightening.

A class I’d like to take: Body Combat is the only Les Mills class I haven’t taken. The description sounds like cardio kickboxing, so I think it would be a great time. Who’s joining me for some punching and kicking action?

I’d like to spend more time: With my littlest brother. He and I are 12 years apart (!) but now that he’s a teenager, I feel like our bond is stronger than ever.

A food I want to eat more of: Like I said earlier, my focus lately is to eat more whole foods and less processed junk. I haven’t had any candy/sweets/dessert since Christmas!

I want to wear more: Blouses and booties.

  • Oh my, Body Combat is no joke. I took it one time.. with Gina at ESAC. I was sore for like 3 days after. Awesome workout though. And I like LC’s resolutions prompt.. more than just losing weight (which is what so many people end up resorting to). Good luck with them all!

    I bet Combat’s the only ESAC offered Les Mills class you haven’t taken! There are actually multiple programs ESAC doesn’t have: RPM (a class on the bike), Grit, and a few others! Les Mills really covers a large spectrum of fitness classes!! Combat rocks. You will love it. The floor of my closet is awful too. I’m fairly organized, but my closet is a bit of a mess….

    • Oh right right, that is what I meant and I should have clarified…Les Mills kicks booty! Should I beg Jeff to bring us any other classes? 😉

    This is cliche, I would like to spend more time volunteering. I just need to stop being lazy and pick an organization or two and commit. And Austin is definitely on my tovisit list! Or just Texas in general. There is just something about the Lonestar State!

    • That is not cliche at all. That’s inspiring! Texas in general, you’re right…what the heck is the draw!? I’ve been wanting to go since I was like 16. 🙂

    OH MY GOODNESS! You MUST try Combat: It is MY FAV!! I suppose as with all classes it depends on the instructor, so if you go and you’re not in love: TRY ANOTHER INSTRUCTOR. It’s so high energy and you (should) feel like you really let our some aggression afterwards 😉 My girlfriends swear we have learned self defense from the moves and are ready to TAKE SOMEONE DOWN if necessary. It has really helped to tone my arms and shoulders too. The downside is that some days I come home and want to ninja kick my family… or actually make contact and ask Scott if I can punch him HARD to see if HE thinks it’s hard! ha ha ha >>>> SO PROUD of you keeping up with the challenge! I was going to email you yesterday but time is getting away from me!! I am REALLY craving Menchie’s thanks to their constant (what I interpret to be “personal” notifications) of a new banana flavor. Hoping by next week the cravings are gone when the 21 days is up! ha

    • Ok, will try it next week! Or whenever the next class is.HAHHA I love punching guys and being like “hey does this hurt? no? damn it.” well our menchie’s closed (wtf?) so i don’t have that tempting me thank goodness….not that there aren’t any other froyo places around but shhhh

    A class I’d like to take: Pole dancing. Seriously. So fun. I also can’t wait for Sky Zone to open in Mt. Pleasant so I can take a trampoline aerobics class.

        It’s an indoor trampoline park that’s opening in Mt. Pleasant some time this year. INDOOR TRAMPOLINE PARK! They have them in the upstate. They do trampoline aerobics classes. Dude, there are trampolines on the wall, so you can literally bounce off the walls. SUPER EXCITED!!!

    I really want to try Body Combat too. And I want to spend more time learning how to make classic French recipes like souffles and beurre blanc!

  • Austin is on my list as well. You may laugh and think rookie question but have you tried Sambal It is made by the same peeps that make Sriracha. It was introduced to us by our waiter at our favorite sushi place. I am on that kick! That recipe looks amazing!

    • yessss i have tried sambal and i love it bc i looooove garlic. i go back and forth. the only thing i don’t love about sambal is how sometimes the pepper seeds get stuck in my teeth. but yeah that stuff is potent!

    Love when you do recipes. How do you think this would turn out using tilapia? Ordered the best of the best shoe organizer on Amazon last year and it holds like a ton of pairs. Lemme know if it would help with the chaos 🙂

    Is it bad that one of my resolutions is to wear more designer shoes? LOL. Seriously though, I finally realized that wearing cheapo shoes was wrecking my feet, and now I am on a mission to replace them! I love LC, by the way.

    Girl, I do the SAME thing with nail polish. I seriously cannot stop once there is a tiny chip. It’s bad. And then I HAVE to always have them painted.
