Spicy White Bean and Chicken Chili with Sriracha

This may sound ridiculous, but last week in Charleston, the weather was really cool. When I say cool, I mean mid 80s with no humidity. It was amazing! We enjoyed every bit of it knowing that just around the corner came nasty weather. Look at this week:

Gross, right? But it’s perfect weather for soup, chili, and cookies, so let me share a chili with you. Amanda and I made this last Thursday after work and it was excellent. I hope you like spicy food…

Spicy White Bean and Chicken Chili

  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 1 lb. ground chicken
  • 2 tbsp. cumin
  • 2 tsp. chili powder
  • 1 tsp. oregano
  • 1 tsp. salt
  • 2 (15 oz.) cans cannellini beans, drained and rinsed
  • 1 bunch kale, stems removed, and chopped into 1-inch pieces
  • 2 cups frozen corn
  • 1 (32 oz.) container fat-free, low-sodium chicken stock
  • freshly grated Parmesan cheese, for topping
  • Sriracha, for extra heat!

In a large saucepan, heat the olive oil over medium-high heat. Add the onion and cook until translucent, about 5 minutes. Add the garlic and cook for an additional minute. Add the ground chicken, cumin, chili powder, oregano, and salt.  Stirring frequently, cook until the chicken is cooked through.  Add the beans, kale, corn, and chicken stock. Bring the mixture to a simmer. Simmer for 15-20 minutes until the liquid has reduced by about half and the chili has thickened. Top with Parmesan cheese and Sriracha!

Can we talk about Sriracha for a minute? I’ve tried it a couple times in the past and liked it, but while Amanda and I were housesitting, I become obsessed. I think we went through half a bottle in the 5 days we were at her parents’. We put it on everything: this chili, breakfast sandwiches, avocado dip, and veggie burgers. There were several times this weekend that we were at the table eating with tears popping out of our eyes, wiping our noses from the burn. It’s so hot, but so good you can’t stop!

I even put this book on hold at the library, so don’t be surprised if you see a lot of Sriracha recipes in the near future.

Are you a fan of Sriracha hot sauce?

What’s your favorite thing to put it on?

YUMMM! I love soup and chili (not matter what the weather is like). These storms are nutso….I keep waiting to get caught in one when I take Kay for a walk

    • i have a feeling you’d really like this one! the sriracha is optional!

  • Kerr

Ooooh I can’t wait to try this chili! I am also recently obsessed with siracha. I love it on my turkey sandwiches.

  • Mary

    oooo that looks delicious!!!

  • mariafalls

I’ve never had sriacha and I do like spicy hot things, but I must say that I’m a little bit scared to try this, but try I will! And I pretty much live off of chili and soup in the winner – so I needed a new chili recipe for the rotation. Perfect!

    • make the soup anyway — it’s not really that spicy until you add the sriracha. i bet you’d like it! 🙂

  • Yes! I cannot believe this book exists. MUST FIND.

I love it in Pho and mixed with ketchup to make an easy spicy dip. Eggs and Siracha is also a winner.

    • yes!! if you want to buy it, i’ts only 10 bucks on amazon. i had eggs & sriracha for breakfast today!

  • CindyGomez

You better believe I starred this post in my Google Reader! Can’t wait to try it out.

  • It’s been “cool” here in Charlotte too.  🙂

I love Sriracha hot sauce!  I have a recipe for lettuce wraps that calls for it, and they are delicious.  This chili looks so yummy.  I need to try it!  I’ve been eating cold weather foods a ton lately for some reason, so this is perfect!

    • lettuce wraps sound awesome too. 🙂

  • Sam

Any kind of hot sauce is amazing in my mind. Sriracha being one of my favourites! Love it on dippy eggs.

  • Livefortherun

I LOVE CHILI! I am bookmarking this bad boy for fall! MMM

The hus loves Sriracha. I look at it and literally want to cry. I wouldn’t put it on anything. Wimp city over here.

    • is this the first thing we haven’t both loved together? sad.

  • I own that cookbook! It’s pretty good– especially if you love all things super hot and spicy like I do.

    • well if the library doesn’t hurry up and get it to me, i may just skim through yours!

  • I’m so excited that you’ve discovered the wonder and awesomeness that is sriracha! I LOVE THE BURN! SOO GOOD. I like it with eggs, chili, anything tex-mex, RAMEN, the possibilities are endless.

    • haha thank you for being excited for me! i’m pretty pumped about it too. i had it with eggs this morning and will have it on my lunch for sure. obsessed.

  • Sherri_lh

I am totally obsessed. I put it on everything except ice cream (so far anyway)… Here’s a silly quiz by The Oatmeal to see how addicted you are: http://theoatmeal.com/quiz/sriracha_addict

    • haha! I just took the quiz and got 88% addicted. Awesome! Thanks for sending me that. 🙂

  • Nancy

Ryan puts sriracha on EVERYTHING. I can’t tell you how often I have to buy a new bottle. It almost replaced ketchup! I’ll have to buy him that cookbook!

  • LOVE sriracha. I need to find that cookbook.

  • Elizabeth Hoskins

Yummy recipe!  I am a huge fan of sirachi, but I always seem to over do it ~ that stuff is spicy!!

  • Here is a list of things that I put sriracha on: tuna, hamburgers, eggs, pizza, salad, quinoa, brown rice & vegetables, chicken and rice, jambalaya, steak (in a marinade of soy sauce, sriracha, and lime juice), and of course, anything Asian.  I’m glad to see that you are becoming equally obsessed, and I look forward to any recipes in the future!

I also recommend their (Huy Fong’s) Chili Garlic sauce (the little jar sold right next to the Sriracha).  It definitely has more of a garlic kick.  I wouldn’t say that I like it quite as much as Sriracha, but it’s certainly worth a taste.

    • hahaha i love this comment. i think the next thing i want to make is sriracha meatballs!! get ready! i’m DEFINITELY going to buy that garlic sauce bc i love garlic. thanks!!

  • I was JUST thinking about chili today! Not that it’s cold here, but just that I had my wisdom teeth out and need soups and was thinking about delicious chili… mmm… and this look good!

  • Ah, the humidity…don’t even get me started. We were in the low seventies a couple weeks ago and now it’s back to the death trap.

  • That might be the ONE thing I’m looking forward to for fall…soup! I also can’t believe they have a sriracha cookbook. I’m going to track it down for the Mr.

  • Holly

Your recent obsession with Sriracha is cracking me up- I see if EVERYWHERE – Instagram, Twitter, Facebook…has it taken your #1 spot away as your favorite food away from Chick fil A?? 😉 Just kidding, I know that would never happen!

  • Amy Kelsey

Sriracha is a staple in our home.  The obsession started about 20 years ago in a Vietnamese soup stall at the farmers market.  Now..it’s everywhere.  I like it in soups, on hot dogs (ssh!) and PIZZA.  Plain cheeze pizza gets really happy with Sriracha.  But every once in awhile, I’ll be heavy handed with it, and I’ll get smoked.  (It’s also my secret in carnitas, but we’re not going to talk about that)
